Durum wheat garlic basil bread loaf:

This is by far the healthiest loaf of bread I have managed to bake!

See when the name is long you can easily and safely assume that its healthy because you can be sure that someone is trying to showoff their genius ingredients in the name… Okay that was a silly assumption but here goes everything:

What you need:

  • 2 cups - Durum wheat flour
  • 1 cup - Olive oil
  • Garlic - 1/4 cup chopped finely
  • Basil - 3 sprinkles - i used dry basil
  • 1/2 packet -  Active dry Yeast
  • 1 Cup - Warm milk (just enough to make the dough)
  • 1/4 tsp - Salt
  • 1-2  tsp - Brown sugar

Mix the ingredients to form a nice dough. In a well-oiled bowl, turn the dough to coat it entirely with oil. Cover with a damp kitchen towel and place the bowl in a warm spot to allow it to rise. I simply put it in the oven and turned the light on. Leave this for an hour - It should double in size.

Take out and beat into shape and keep it to rise for another hour or two. After an hour or two check if its risen to double the size. If it has, take it out of the oven and preheat the oven to 375 F. Then slide the baking pan after topping the dough with sesame seeds and set a timer for 15 minutes. After 15 min check to see if the baking is done the old fashioned way-the toothpick :). If not set it for another few minutes till the top is golden brown. Mine took 20 minutes…

We enjoyed it with some tomato chutney which took me about 10 minutes to prepare.

Quickly:

Oil - 1 Tspn

Mustard - 1/2 Tspn

Jeera - 1/2 Tspn

Methi - 1/4 Tspn

Asafoetida - 1 pinch

Onion - 1/2 cup finely chopped

Garlic - 2 pods finely chopped(optional)

green chili - 1 finely chopped(optional)

Thai chili garlic paste - 1 Tspn

Hunts tomato sauce - about 200 gms

Heat oil and add the above ingredients in the order mentioned. When you get to the onion and garlic saute till the onion turns translucent. Add the green chili, chili garlic paste and the tomato sauce and and let it boil for a few minutes. Taste for salt and serve hot with the bread…
